Three Cornered Leek Pesto Recipe

Three-cornered leek pesto is a delicious and easy-to-make condiment that can be used as a spread, dip, or sauce. Here’s a simple recipe for making this flavorful pesto:
 
Ingredients:
– 1 cup of three-cornered leek leaves, washed and chopped
– 1/2 cup of fresh basil leaves, washed and chopped
– 1/4 cup of pine nuts
– 1/4 cup of grated Parmesan cheese
– 1/2 cup of extra-virgin olive oil
– 2 cloves of garlic, peeled and chopped
– Salt and pepper to taste
 
Instructions:
 
1. Begin by washing and chopping the three-cornered leek leaves and fresh basil leaves.
 
2. In a small skillet, lightly toast the pine nuts over medium heat until golden brown.
 
3. In a food processor, add the toasted pine nuts, chopped garlic, and grated Parmesan cheese. Pulse until the ingredients are well combined.
 
4. Add the chopped three-cornered leek and basil leaves to the food processor and pulse until they are finely chopped.
 
5. While the food processor is running, slowly pour in the olive oil until the pesto is smooth and creamy.
 
6. Taste the pesto and add salt and pepper to taste.
 
7. Transfer the pesto to a clean jar or container, and store it in the refrigerator until ready to use.
 
Three-cornered leek pesto can be used as a dip for vegetables, a spread for sandwiches, or a sauce for pasta dishes. This flavorful pesto is a great way to use up any extra three-cornered leek leaves you may have, and it’s a versatile condiment that adds a burst of flavour to any dish.
